Laswa is a dish from Iloilo. My mom introduced this to us when I was in high school. At first, I found the sensation of biting into tiny shrimps a little weird, because the vegetables go into your mouth smoothly, while the tiny shrimps have a bit of “crunch” when you bite into them. Anyhow, it just makes this dish all the more interesting. Decided to cook it for lunch at Mellow today but only with squash & saluyot as the main vegetables. Didn’t have enough time to really pick out a lot of veggies at the grocery today.
